OK – honestly the easiest “recipe” ever today! I can’t take credit for these soft and chewy gingerbread cookies – my mom’s friend gave her the idea, I tried it, and LOVED it!! I thought you might love it too!
I don’t know about you – but I’m more of a “soft cookie” girl. I love gingerbread, but I don’t like how hard the gingerbread snaps are that you get at the food store. This softens them right up and makes them soft & chewy – just the way I like them!!
Ready for the EASY “recipe”?? Simply buy some gingerbread snaps (I just go generic) and vanilla icing.
Spread the icing (generously) on a cookie and make a sandwich.
Here’s the trick – seal them in a container and let them sit for 4 full days.
If you’re like me and will be tempted to open them up beforehand – put them in a top shelf of a cabinet and write a reminder on your calendar to take them down in 4 days. Once they’ve sat, the icing helps to soften them up and they’re perfectly chewy & soft! I love this as a dessert idea for when you’re hosting people because there’s no baking involved, and you just have to pull them out before your guests arrive. So simple!
