If you’re anything like me, you’re trying to cut out a lot of the more processed and convenience foods at the beginning of this new year. My husband and I used to make mason jar salads every single week when we worked full-time jobs outside the home.
Now that we’ve got 3 kids and are working from home, we let the mason jar salads go. But I’m bringing them back! We’ve been eating these for lunch and have really been enjoying this recipe in particular.
The best parts? There’s no weird hard to find ingredients, and most of the ingredients can be found already shredded or chopped. You can make a nice healthy salad without spending a ton of time chopping all the ingredients! We bought our ingredients from Walmart.

Easy healthy make ahead Thai crunch salad recipe:
Salad Ingredients:
Romaine Lettuce
Shredded Cabbage
Shredded Carrots
Bell Peppers
Frozen Edamame (thawed)
Green onions
Dressing Recipe:
1/2 cup nut butter (peanut or almond works well)
1/4 cup coconut aminos
1/4 cup rice wine vinegar
3 cloves minced garlic
1/4 cup honey
2 tsp sesame oil
1 TBSP ginger
Warm water to thin out as needed
Topping: sliced almonds
Combine the salad dressing ingredients and store separately.
When you are ready to eat your salad, put the dressing on and top with sliced almonds.
How to store mason jar salad:
This salad will hold well for 3-4 days in the fridge if you follow the instructions above.
