I am trying to deal with having gestational diabetes (for a second time…). It’s not been fun, but I’m trying to make the best of it!
Part of having gestational diabetes means I have to eat 3 meals and 3 snacks every day. I need to eat a LOT of protein, which means I basically eat nuts around the clock. THEN I found these Blue Diamond honey roasted cinnamon almonds – and they brought me back to one of my favorite snacks that my roommate introduced me to in college. (Let’s not talk about how that was TEN years ago…!!) This protein packed snack has saved me from snacktime boredom the past few weeks, which is so appreciated when you’re 33 weeks pregnant and can’t have any sweets!
The snack is super simple, protein packed, satisfying and healthy.
Start with your yogurt base (I use vanilla Greek yogurt). Add cinnamon, a tiny drizzle of honey, chia seeds, and then Blue Diamond honey roasted cinnamon almonds on top.
In college, we made it without chia seeds and used plain almonds. That tasted good, but this makes the taste so much better (plus – chia seeds are such a superfood!)

I love almonds but haven’t tried this. I’ll have to grab some the next time I’m at the store. They sound delicious!
