It’s so hard to find recipes for things that I love that fit into my “plan” – but these lemon blueberry scones taste SO good AND they don’t break my diet at all!
You definitely don’t need to be a skilled baker to make these either – there’s not too much involved!
Lemon Blueberry Scones
Adapted from All Recipes
Makes 14 scones
Ingredients:
- 2 cups flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon grated lemon peel
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup lemon yogurt
- 1 egg
- 1/4 cup butter, melted
- 1 cup fresh or frozen blueberries (I used frozen, but when fresh are in-season then I use fresh blueberries)
In a large bowl, combine the first six ingredients (dry ingredients).
In another bowl, combine the yogurt, egg and butter.
Stir into dry ingredients just until moistened.
Fold in blueberries.
Drop by heaping tablespoonful’s 2 in. apart onto a greased baking sheet.
Bake at 400 degrees F for 16-18 minutes or until lightly browned.
If you’re NOT watching your calories/sugar, etc…then you can combine 1 Tablespoon of lemon juice with 1/2 a cup of powdered sugar to make a glaze to put on top of the scones once they have cooled down a little bit.
Enjoy your scones!
I personally love these fresh and warm. I usually lightly re-heat them in the days after I make them.

We LOVE these! The original recipe comes from Taste of Home – Cooking Lite. Anyway, we’ve successfully used white whole wheat flour in place of the all purpose and have swapped the 1/4 C melted butter for 2 T olive oil and 2 T applesauce, or just 3 T of olive oil. We’ve also successfully reduced the sugar to 1/4 C {flavored yogurt is super sweet!}. Those simple changes make an already great scone even better. Now that blueberry season is here, these are a regular occurrence at our house! I’m so glad you enjoy them too.
