Wow, it’s feeling like fall here in PA! And I’m loving it! Time to break out the jeans, scarves & the crock pot!

Making a whole chicken in the crock pot with some veggies on the side. I love doing this throughout the fall/winter so I can make my own chicken broth for soups!
Using the leftover chicken from that dinner, we’ll make a chopped Thai chicken salad:
Breaking out the crock pot again & making an easy cashew chicken:
And getting back into soups again – making this (also very easy) tomato basil tortellini soup:
And finishing off the week with a good old fashioned taco night! We’ll be making traditional tacos, but I love this round-up of variations for taco night:
